Jumaat malam hari tue oven beroperasi lagi. Kali nie saya buat red velvet cupcakes. Dah lama sediakan bahan-bahan tapi mood membaking resepi nie tak mari-mari. Bibik dok risau tengok saya selalu bawa balik bahan-bahan nak buat cake ke rumah. Dia kata saya rajin buat tapi kat rumah takde orang nak makan.
Tapi kali nie buat pun ada sebabnya. Tue yang macam terpanggil nak buat RV Cupcakes malam nie. Hari Sabtu lepas (19 Januari) was Rosie's 14th birthday (Rosie's is SIL 1st daughter). Aunty Miza dia pun saje la nak bagi this cupcake for her birthday.
Dulu masa kat London dah pernah buat RV cupcakes nie. Tue la pun sekali buatnya. Lepas tue takde nak buat lagi dah. Akan tetapi untuk kali nie punya attempt kira dah ada sikit pengalaman la. Insyallah, kesilapan tue boleh diminimakan.
My 1st RV Cupcakes
This time around saya tak pakai resepi yang dulu. Google lagi resepi yang baru. Tapi bila tengok balik resepi nie more or least lebih kurang je. Sikit je beza dari segi sukatan. Yang lain...ingredients nya sama sajork. Untuk RV kali nis saya guna resepi dari this blog.
1 1/4 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cocoa powder - i used berry callebaut
1 tbsp red colouring - I used 1 1/2 tsp wilton red paste(no taste)
1/4 cup soft unsalted butter - 57g
3/4 cup sugar
1 egg
1/2 tsp vanilla extract
1/2 cup buttermilk - I used 1/2 cup whole milk plus 1/2 tbsp vinegar/lemon
1/2 tsp vinegar - i used heinz distilled white vinegar 5%
1/2 tsp baking soda
Cream cheese frosting :
125g cream cheese
50g unsalted butter
110g powdered sugar - i reduced it to 80g
1 cup fresh cream, whipped until stiff - i used double cream
Method
1. Preheat oven to 175 degrees Celsius.
2. In one container, sieve flour, baking powder and salt. Set aside.
3. In a small container, combine cocoa powder and red coloring and stir well until form a paste (I added a little water).
3. Using a stand mixer, beat butter with sugar until light and fluffy. Add the egg, beat until blended. Add the vanilla extract and cocoa powder mixture, beat until well blended.
4. Add in sifted flour and buttermilk alternately. Beginning and ending with flour. (F-M-F-M-F)
5. In a small bowl, combine vinegar and baking soda and add it to ur batter. Stir well with a spatula. Pour into a 6" baking pan and bake it for 50mins or until cooked.
6. Let cool on wire rack.
7. Once cool, slice cake into two and spread cream cheese filling.. top it with the rest of ur cream cheese too... chill for a few hrs..
Cream Cheese frosting:
1. Beat cream cheese with butter until soft.
2. Turn mixer to low speed, add powdered sugar a little at a time. Whisk until well blended.
3. Add whipped cream, stir through with a spatula.
* Time : 23 minit dan
suhu pula 170'C. (bergantung pada oven masing-masing ya)

Tara...ini RV fresh from the oven!!!!!! Suci murni kerana masih belum diletakkan topping. I just love the red color. Sangat menyerlah warnanya.

QC pada malam itu adalah Bibik dan Mr. Hubby. Berdebar2 (ceh...ceh..drama la sangat) rasanya nak dengar verdict dari dioarang. Of course la uolls ...bendanya dah siap. Pastu kalau rasa ke laut, camne??? Esok nak bawa gi birthday party nie.
Hubby kata sedap...Bibik pun kata sedap (berani kau Bibik kata tak sedap???!!!!) Lega mak incik!!!! So bolehlah kita bawa untuk event esok. Esok lagi ramai yang nak merasa nie. Kalau diaorang suka, alhamdulillah. Kalau tak kompen iolls tak buat lagi dah RV nie.

Personally, saya suka resepi yang kedua tue. The color, the texture and the taste is just perfect for me. Or mungkin sebab iolls dah tak menggelabah macam 1st attempt dulu kot. Tu yang semua macam ok je bila try buat kali kedua nie. But seriously, memang terasa ke'velvet'annya.....
